Baguettes are in the oven and I am pacing. I have to share with the neighbours bc it'd be too much for me and you have to eat them fresh, so I had to prearrange a collection with the neighbours before they leave for work, so no pressure at all! Why are my hands shaking more than usual? I can barely hold the phone. Can you tell it's my first time?

I've cooked in cafes, bistrots, restaurants and pubs but I have never baked anything apart from pizza where the base came pre-made. Any time there's yeast and rising involved, I turn into a bag of nerves; probably, because it's a mystery and alchemy, and the only way to conquer it is to carry on baking.

Well, I have something. You are supposed to let them rest for 20 minutes and it's a good job I checked! I hope they are not going to be soggy inside, but I can't check yet, can I? Let's do more pacing around πŸ˜ƒ

btw, as long as you don't tell the French you *can* eat baguette that is even a couple of days old, it's just not as good in texture

@Paper Moon a completely unrelated (not) anecdote: years ago I used to routinely bake pretzels, try one as soon as it came out of the oven, then pack them up in a paper bag, travel a couple hours by train and bring them to a D&D night

I knew that after two hours traveling they weren't at their best. the D&D group didn't, and they *loved* them :D
(and it's not like I didn't eat one or two with them)

@valhalla it's normal to be aware pf every little imperfection in something you've made yourself. You are a sewer so I am sure you know what I mean. But when other people look or taste your work, they see the whole thing, not just the imperfections.

According to my neighbour, the baguettes are perfect, although I massively disagree.

@valhalla it's been approximately 7 hours since I've made them, I've just had some and it is absolutely delicious! If I bought one this fresh from a bakery, I would have thought it'd just been baked!
