have you looked into dino-im? it's quite recent, but imho it feels a lot more “modern chat” than gajim, and it aims at being simple to use rather than supporting everything like gajim (e.g. omemo works out of the box, with no need for plugins).
(it's not my daily xmpp client, that one would be profanity, but it's the one I run on the pinephone)
